Low Carb Pasta Salad

2 servings dreamfields rotini pasta (1 1/2 c. before cooking)(10 carbs)
5 sliced green olives (1 carbs)
1/3 jar roasted red peppers (1.5 carbs)
2 cups spinach leaves (1 carb)
1/4 cup Athenos greek dressing (4 carbs)
4 boiled eggs, sliced (0 carbs)
2 chicken breasts, cooked and chopped (broiled or grilled or boiled)(0carbs)
1/4 cup feta cheese (3 carbs)
Dried parsley flakes
Salt and pepper to taste.

While the pasta and chicken are hot toss with the spinach to wilt it down just a little bit. Pour over the dressing and allow it to marinate the main ingredients. Add remaining ingrediants. Toss well.

Makes 5 large servings = 20.5 carbs

Coleslaw

1/2 head small cabbage, shredded
1/4 - 1/2 small onion finely chopped
1/2 cup dill pickle relish
1 tbsp sugar
1 tbsp vinegar
Salt and pepper
Duke's Mayonnaise

Mix the sugar with the vinegar and pour over the cabbage. Mix well. Add pickles, onion, salt and pepper. Mix well. Use the maynnaise sparingly but start out with a good heaping spoonful. If you need more add it. This part is really how creamy you like your slaw. I don't buy those prepared mixes for slaw. I don't think the cabbage tastes the same in comparison to a fresh head you have shredded yourself. Sometimes I add carrot, sometimes I don't. The carrot doesn't really add anything but color.

Angie's Cantaloupe Salad

1 fresh cantaloupe
1 tsp organic honey
2 tbsp vanilla lowfat yogurt

Seed and slice the cantaloupe into small bite sized pieces. Drizzle with honey. Toss well with yogurt. Chill before serving.

Angie's Broccoli Salad

I have been making some of my own recipes with tastes that I like. Here are a couple we are having for supper today.

Angie's Broccoli Salad

1 head fresh broccoli
1/4 grated cheddar cheese
1/3 cup chopped spanish olives
2 tbsp finely minced vidalia onion
1/4 cup raisins
1/4 cup chopped walnuts
3 tbsp Dukes mayonaise


You must use Dukes, you might even substitute Sauer's Mayo, but for any other mayonaises I can't say it will taste the same. I hate Kraft, Hellman's and all those other yucky mayo/dressings. Ack!!!

Wash and drain the broccoli. Snip the flowerettes apart in small bite sizes. Peel and slice thinly the tender stalks. Mix with all other ingredients and chill.

This goes well with some left over cold chicken diced, too. However, I did not add the meat to this dish tonight. Steve had too much meat last night.
