Steven is sleeping -finally! I am trying to be very very quiet. Do you know how rare a nap is? My boy doesn't sleep or rest well. He is constantly on the go. I am enjoying these quiet minutes like you wouldn't believe. I am so very grateful for them. Thank you all for the birthday wishes. He has had a very busy week (which means I have had an even busier week). I need to boost my protein intake. Eggs seem to be the easiest solution. I buy eggs in a 5 dozen flat. Now if I can just figure out how to get this latest box down my throat. I have fried eggs. I have boiled eggs and added them to salads and pasta. I hate scrambled eggs. I have even done omelettes. None of which are appealing. I can only do so much with eggs. The way my brain is fried at the moment I can't even come up with anything appetizing for the incredible edible egg. Please won't you share with me your favorite recipe for eggs?

I love eggs fixed anyway you can think of - except raw. I don't have any special recipes for them, but my favorites are Eggs Benedict and cheese omelets.

Not sure about all the rules of protien only diets, I seem to remember my friends being able to eat splenda type sugars.

You could always make a savory custard/flan type of dish, I think those take TONS of eggs. If you used the fake sugar, maybe they would still be on your diet? Hope this is coming out as helpful as I mean it.

My fav is eggs benedict, I can't get enough.

french toast w/ low carb bread and extra egg wash. I can manage to get almost a whole egg (beaten wash) on one piece of bread if I try. Not as yummy as regular, but if you don't want the extra carbs, works for me. Extra cinnamon and a pinch of nutmeg for the mmm mmm smell!

Mama's Baked Eggs

Baked Eggs

For every Egg add 1 tablespoon cream, 1 slice butter (a small pad), Salt & Pepper!

Bake at 350 degrees for 20 minutes or until eggs are set.

Put the eggs in individual baking cups which is how it was traditionally made or put in a baking pan and make them all in one.
We loved them in individual baking cups growing up because you each got your own, but it is alot more work than putting them all into one big baking pan.

This is a family tradition that is still mainly served on holidays and special occasions. My mom grew up with this as their holiday breakfast and has continued the tradition with us!

My family loves them you might be able to make them with low fat milk and substitute something for the butter. I dont know though but your family will love them!

If you can stomach an omelette, what about beating an egg, pouring it into pan to fry it, sort of like an omelette, then dumping it out onto plate, so it is just a big flat circle of cooked egg. Then use it sort of like a tortilla, add your salad type fixings onto it and roll it up like a fajita. There you go! A carb-less wrap-type of food. I've seen these for sale at a local farmer's market. They promote it as a "gluten-free" alternative.

I like spicy food, so my favourite way is to saute some chorizo or sausage, add some minced shallot or onion,add some salsa (jarred is fine)or red sauce, season with cilantro and adobo (if salsa) or crushed red pepper and if red sauce.
Take a ramekin and lay some sauc eon the botom, make a nest, crack in the egg sit it in the nest, season with s&p, more sauce on top and cover with cheese of choice.
bake in the oven 350(ish) for 20 mins(ish).

Jewish Egg McMuffin (non-kosher): Toast an english muffin. Spread it with chive cream cheese. Dot it with lox or smoked white fish. Top with a fried egg.

Sadly I have not been able to eat eggs since I was pregnant with my son. I LOVE eggs, but ever since then it leaves a raunchy feeling in my tummy.

I enjoy eggs fried (soft yolk)over sausage and rice.

This way you get your daily healthy serving of bread, protein, fat and if you have it with a salad, you also get your veggies :)

Edamame is a great protein source that is very low carb for when you just can't face another egg or cheese or piece of meat. They are a great snack too!

Also Quinoa is a good protein source but not sure about the carb count though - worth checking out though!

Funny, I was going to go looking for this recipe for myself. This isn't exactly it, but you can look on your own to find something too. The basic ingredients are eggs, salmon and cream. A boyfriend I had a long time ago had a mom who was a great cook. She was German, and everything she made tasted like heaven. I wish I would have learned to make spaetzl from her. Anyway. Here it is.

Chorizo is also a good way to mask the taste of the egg. Cook the chorizo then add the egg to the pan. The spicier the better. If you have a butcher, try to get it from him, as it is likely to be better quality than the mass processed stuff you find at the store.

I also love hard boiled egg in my tuna salad, and on chef salads. I try to avoid the yolk though as there's so much cholestrol in the yellow stuff. :)

I like egg salad sandwiches... yummmm...
