Duck Egg Belgian Waffles

My Silver Appleyard ducks are starting to lay eggs.

Lots of eggs! They are fabulous to cook with.

Saturday for supper we had Duck Egg Belgian Waffles.

3 duck eggs

Separated. Look at those rich orangey yolks.

1 1/2 cups milk
5 tbsp butter
3 duck eggs yolks

Beat well.

2 cups of flour
3 tsp baking powder
1 tbsp sugar
1/2 tsp salt

Sifted.

Add sifted ingredients to the wet mix

Put the duck egg whites into a clean bowl.

Beat until stiff.

Fold the beaten egg whites into the batter mix.

Take your time. You want to keep the air in the batter.

Using a 1/4 cup measure I pour the batter on to a hot waffle iron. Close the lid gentley.

A few minutes later I open the lid.

Add butter and syrup while piping hot.

Supper anyone?

Since mr. kenju and I keep different schedules, waffles are something we like for dinner too. I use a mix - which probably would send you away screaming!! Those look wonderful, Angie, and the ducks are so pretty. How are the family?

We are amazed at how well the silver appleyard ducks lay! Each one an egg a day. And HUGE, we need special egg cartons just for them. My mother always said that duck eggs make the best baked goods. My daughter and I wholeheartedly agree! And they are a very pretty ornament in the barnyard (and on my lawn when they find there way there.)

Angie -- what kind of syrup do you use? We like Grade B syrup -- a little less sweet, a little thinner but much more maple-y than the standard Grade A. You?

Heather, I am not a maple fan. At least not a syrup on pancakes or waffles. I grew up down south in the land of sugar cane. We eat cane syrup.

Fantastic looking waffles! And where did you find a clear bowl for your KA? I must have one!

Would you believe I have yet to get a single egg from either of my two duck hens? One is a Cayuga, the other is a Blue Swedish.

How old are the ducks? It is a bit early and is just now heading into duck and goose egg season.

The mixing bowl is from an older KA model. Look around in junk stores and flea markets. You'll find them. I like having the extra bowl.
